Sneaky peanut butter (good for nursing mamas!)

Want to guess what I sneak into my peanut (and other nut) butter?? Lots of goodies! Carrots and milled flax seeds! Who knew?!?! The carrots actually make the PB taste a little sweeter, and it helps cut the calories (if that’s important to you). The flax adds some omega 3-s, fiber, and antioxidants!

RECIPE:
1/2 cup nut butter of choice (peanut, almond, cashew, sunflower)

3-4 peeled and boiled carrots (soft and cool)

1 Tbsp. Milled Flax seeds


Blend ingredients in a blender, and enjoy for up to three days in the fridge.

The addition of carrots give a nice boost of beta carotene, which is a source of Vitamin A. Pregnant women are cautious about their Vitamin A intake, but keep in mind that the natural beta carotene form (like in carrots) has been shown to not pose any risk to the baby, and has been shown to offer lots of benefits (like supporting baby’s lung development, kidney development, and overall growth and development). So eat those carrots ladies!!! 


PS-I also sneak this peanut butter into my three-year-old who “doesn’t like vegetables”. Hope y’all enjoy!
